VIRGIN ATLANTIC TAKES FREEDOM’ TO THE SKIES
Make your reservation, take your seat, and then get ready to
experience a modern dining extravaganza in the sky in Upper
Class. Freedom is here - innovative, theatrical, fresh and fun
with a touch of sin.
THE STORY
Virgin Atlantic's aim was to introduce a product that would
become synonymous in the industry with the finest and most innovative
eating and service experience onboard an aircraft. To achieve
this goal, it meant bringing together the expertise, creativity
and knowledge of both the airline's in-flight services team
and crew development teams and the airline’s catering contractors
from around the world.
After extensive research and trials, Virgin concluded that passengers
wanted more choice not just in what they could eat and drink,
but when they felt like it. The stereotyped
service approach - routine of take-off, drink trolley, meal
served, coffee, etc. was too restrictive for today's business
traveler. "Freedom’ to eat what you want when you want
it, is the way forward for Virgin Atlantic's Upper Class passengers.
The Freedom’ menu has been designed with a restaurant in the
sky’ concept. This enables our passengers to choose what ever
takes their fancy from the moment they set foot in The Clubhouse,
until they buckle up for landing. They now have unrivalled choice.
You may order a delicious ice cream sundae, while the person
next to you tucks into a gourmet-style main dish. Along with
the new food service comes a new style galley area, which means
no longer will the constraints and limitations of equipment
dictate the way the food is presented.
THE PREPARATION
With the aid of a new style galley with such additions as a
Tabgrabber’ (for passengers’ orders) and a Skateboard’ (an extra
work surface in the galley) food is prepared in a totally different
way. Every item is cooked to order, in separate containers,
using state-of-the art convection steam ovens. This enables
everything to be kept succulently moist before the cabin crew
individually presents each item on the plate. The introduction
of plating onboard enables Virgin to increase the height of
the food onboard - one dish stands eight inches tall. Current
food trends say, “height is the name of the game!”
THE MENU
Virgin Atlantic’s Upper Class passengers will now have a choice
of such temptations as:

Light bites: with soups, fresh fruit, salads and crostini;
• Bigger bites: with herbed salmon cakes, coriander chicken
and Virgin’s all nighter – all night breakfast;
• On the side: customers can select their own vegetables to
accompany their meal;
• Naughty but nice: a selection of deserts, ice cream and chocolate
miniatures;
• Say cheese: a connoisseur’s selection of cheeses.
To compliment the food menu a wide variety of wines, spirits,
beers and soft drinks are available. And for those that a cup
of tea or coffee is the best drink of the day the choice is
hot ‘n’ herbal. There’s also an imaginative choice of hybrid
dishes reflecting regional tastes like oriental crusted salmon
with hoisin sauce on the Shanghai route. For those who prefer
to eat around the bar, a selection of nibbles ranging from pistachio
nuts and smoked salmon canapes is provided.
The success of our Snooze Service has clearly demonstrated that
passengers value the
opportunity of having the longest possible sleep on a flight.
These passengers will be able to eat a light meal in Virgin’s
Clubhouses before they fly. However, others prefer to eat onboard
rather than sleep. We will be offering hot chocolate and fruit
and herbal tea on our overnight flights. If a passenger gets
sleepy, but is worried that if they sleep and miss dinner they
will wake up and feel hungry later, they no longer need to worry.
If they want the All Night Breakfast at 4:00am they are welcome
to have it.
The emphasis is on finding out what a passenger wants at that
moment, and making it happen, whether it is a mini Thai fish
cake and a glass of champagne, or a few hours sleep without
the interruption of a meal being served.
The new cutlery, crockery, glassware and accessories compliment
and complete Virgin Atlantic’s new Restaurant in the Sky.’
