Squash3 pounds of fresh yellow squash
2 large eggs
1/4 pound sweet butter, divided and melted
1 small onion, finely chopped
1 tablespoon sugar
1 teaspoon salt
Black pepper to taste
1/2 cup cracker crumbs
Cut the yellow squash into large chunks and boil until
tender. Drain, peel and then mash the squash using a food
processor if you like. Add in the eggs, chopped onion 1/2 of
the melted butter, sugar, salt, pepper and 1/2 of the cracker
crumbs. Mix well. Pour the mixture into a greased casserole
dish. Sprinkle the remaining cracker crumbs over the top of
the mixture and then drizzle the remaining butter over that.
Bake at 375F. degrees for about 50 minutes or until the top is
golden brown
