medium potatoes, cubed 6
milk 1/4 cup
butter 1 tsp
pepper 1/2 tsp
dried parsley 1/2 tsp
broccoli florets 2 cups
small onion, sliced 1
shredded cheddar cheese 1 cup
Preheat oven to 350 F / 180 C. In a large saucepan, cook
potatoes in
boiling water until tender; drain well. Mash potatoes with
milk, butter and
seasonings. Meanwhile, steam broccoli and onion until barely
tender. Spread
potato mixture in lightly greased 8 cup / 2 L baking dish; top
with
broccoli, onion and cheese. Bake, covered, for 10 minutes;
remove cover and
bake for 5 minutes longer or until cheese is melted
