Caraotas Negras (Black Beans)
1/2 lb. black beans or 2 cans of black beans
1 medium onion, minced
1/2 red pepper, minced
1 shallot
5 strips of bacon, cut in small pieces
2 cloves of garlic
1 tbs. salt
2 tsp. olive oil
1/2 tsp. cumin
The night before, soak beans in 15 cups of water. Next day
drain and place them in a pot with 25 cups of water. Add salt.
Boil. In a skillet, fry bacon, shallot, red pepper, garlic and
olive oil. Cook for 5 to 10 minutes over medium heat or until
onions are brown. Set aside. Once beans have boiled for an
hour, add cumin and salt to beans. Reduce heat to low and
cover. Cook for 30 minutes until tender
