Eggplant Italiano2Lg Garlic cloves, minced
1Lg Onion, coarsely chopped
1Lg Celery stalk, chopped
1Lg Green pepper, chopped
2TBS Olive oil
1Cup Fresh mushrooms, sliced
1Med Eggplant, sliced 1/4"
1/2tsp Dried Marjoram
1/2tsp Dried Thyme
1tsp Dried Oregano
1can Tomatoes, diced (28oz)
2Cups Mozzarella Cheese, grated
Salt & Pepper to taste
Saute garlic, onion, celery and green pepper in hot oil
in skillet for about 5 min. Add mushrooms and saute 1 more
min. Add eggplant slices to skillet, stirring well for an
additional 5 minutes. Add seasonings and tomatoes. Cover
and heat to simmering. Place in an oiled shallow
casserole. Sprinkle cheese over eggplant and place,
covered, in a pre-heated oven at 350 for 20 minutes.
Remove cover and bake an additional 10 min, until bubbly
and golden.
