Creamed Peas and Onions
1 Tbs (15 ml) butter
1 Tbs (15 ml) all-purpose flour
3/4 cup (180 ml) heavy cream, half and half, or milk
Salt and freshly ground pepper to taste
A grating of fresh nutmeg
3 cups (750 ml) frozen peas, cooked according to
the package directions and drained
1 cup (250 ml) frozen pearl onions, cooked according
to the package directions and drained
Freshly grated Parmesan cheese for garnish (optional)
Heat the butter in a saucepan over moderate heat and stir in
the
flour. Cook for 3 minutes, stirring frequently, and whisk in
the
cream. Bring to a boil, stirring frequently, and season with
salt,
pepper, and nutmeg. Stir in the cooked peas and onions and
garnish with grated Parmesan if desired. Serves 4 to 6.
