Broccoli Salad
2 lbs.
Fresh broccoli chopped in bite sized pieces
1 red onion chopped
1 block of Colby Jack cheese cubed in small pieces
Dressing:
1 cup balsamic vinegar
3 tbsp mayonnaise
1/2 cup granulated sugar
Combine
the first 3 ingredients in a large bowl.
In a separate bowl combine the vinegar, mayo, and sugar and
stir with a fork until the mixture is smooth. Do not pour the
dressing over the broccoli mixture until just before serving.
It tends to get soggy the longer it sits. I usually play
around with the measurements for the dressing until it is not
too tart tasting. This is a great dish for cookouts. People
always ask me for the recipe. Enjoy!
