Black Bean Salsa
2 cups cooked, firm black beans
3 tablespoons olive oil
3 tablespoons fresh lime juice
1/2 cup cooked corn
1 avocado finely chopped
1/2 green bell pepper,finely chopped and cleaned
1/2 red pepper, finely chopped and cleaned
1 cup red onion, finely chopped
2 jalapeno chillies, seeded and minced
1/2 teaspoon cumin
1/2 cup cilantro, chopped
Salt and pepper to taste
Place all the ingredients into a mixing bowl and toss.
Make sure there are enough seasonings as the salsa should
be highly seasoned
