Frijoles (Mexican Beans)2 cups dried pink beans,
dried pinto beans
or dried kidney beans
5 1/2 cups lukewarm water
1 onion
1/2 Bay leaf
Salt to taste
1/2 cup bacon drippings
Rinse the beans, but do not soak them. Place in a pot
and add the water onion and Bay leaf. Cover and simmer
until beans are wrinkled. Add the salt and continue
cooking until tender. If necessary add more water. When
the beans are cooked mash a few of them to thicken. Stir
frequently and add the bacon fat and cook 10 minutes
longer
