Vegetarian Summer
Delight
1 (red) onion
1 red bell pepper
1 green bell pepper
1 pound tomatoes
1/2 pineapple
2 tsp chopped oregano
1 tsp freshly ground black pepper
salt to taste
2 tbsp olive oil
Chop all the fruit and
vegetables in bite-sized pieces. Stir-fry the onion in the
olive oil until glazed. Add the bell pepper, oregano, salt and
black pepper and stir-fry for 1 minute. Add the pineapple
(with juice!) and the tomatoes and simmer for 3 minutes. Serve
with pasta.
Serves 3-4.
This recipe has a
million variations - the base is onion, tomato, black pepper
and oregano. Beyond that, add whatever you enjoy; eggplant,
cauliflower, zucchini, cucumber, peaches, mango... whatever
takes your fancy.
