Tabouleh
1 lb. tomato, diced
1 lb. yellow onions, diced
2 bunch parsley, chopped
2 Tbs. chopped fresh mint
1/3 cup lemon juice
2/3 cup olive oil
1 cup bulgur, soak in just enough hot water to cover
1Ž2 Tbs. salt added to bulgur mixture
After bulgur has soaked up all of the water mix all
ingredients together.
Traditionally this is eaten with Pita Bread or romaine
lettuce leaves. We enjoy using fresh tortillas that have
been toasted; either by baking in an oven or in a toaster.
