Fresh
Tomato, Basil and Ricotta Sauce.
3 C. chopped ripe tomatoes
1/2 cup chopped fresh basil
2 T. minced red onion
1 garlic clove crushed
1 C. ricotta cheese
1/4 C. olive oil
Salt
Fresh ground black pepper
Combine the tomatoes, basil, onion and garlic. Stir in the
ricotta, oil and salt and pepper to taste. Toss hot pasta with
the sauce and serve at once
