Lamb
Marinade
1 medium onion, quartered
6 cloves garlic, peeled
1 bunch scallions, both green and white parts trimmed
1/2 cup fresh cilantro leaves
2 bay leaves
1 tsp salt
1 tsp black pepper
1/2 cup dry white wine
1/2 cup olive oil
Combine all ingredients in a blender and process to a
coarse paste. Store in a jar in the refrigerator for up to 2
days. Makes 2 cups
