Authentic Green Goddess
Dressing
This restaurant recipe originated at the Palace Hotel in San
Francisco. The hotel originated pre turn of the century (we've
read 1875 and later opening dates for the restaurant). The
story goes that in the 1920's, the chef created the dressing
and served it to the play star George Arliss when he was
starring in the play The Green Goddess that was playing nearby
in the 1920's. There are many versions but the most authentic
use minced anchovy fillets.
Ingredients:
2 cups freshly made (preferably home made) mayonnaise
6 anchovy fillets
2 each whole scallions
1/4 cup fresh parsley
1/4 cup fresh chives
2 teaspoons fresh tarragon
2 tablespoons red wine vinegar
Salt and pepper to taste
Procedure:
Place ingredients in a food processor and blend until
smooth. Voila! Simple!
