Cider
Baked Applesauce
12 tart apples, cored, peeled
and sliced
2 lemon rinds, grated
1/2 cup apple cider
1 cinnamon stick, broken in pieces
4 tbsp butter
1/4 cup brown sugar
Place apples and cinnamon in casserole. Sprinkle with lemon
rind. Pour cider over all, bring to a boil on top of stove.
Cover and place in 350 degree oven. Bake for 30 minutes.
Remove from oven and
discard cinnamon stick. Put apples through food mill or coarse
sieve. Add butter and sugar.
Yield:8 servings
