Bread
Salad.
1 loaf Italian bread, several days old
1 lg. red onion sliced
10 fresh basil leaves, torn into pieces
2 lrg. tomatoes, sliced
Salt and Freshly ground pepper
1/3 cup olive oil
1 T. red wine vinegar
Soak bread in very cold water for 15 minutes.
Squeeze to remove all liquid and place in a bowl. Add onion,
basil and tomatoes. Cover and refrigerate for 1 hour. Remove
from refrigerator and season with salt and pepper. Toss with
oil and vinegar. Serve over Romaine lettuce leaves.
