Bourbon and Hoison Glazed Steaks

1 cup of hickory wood chips
2/3 cup hoison sauce
2 1/2 tbs bourbon
2 tbs rice vinegar
2 tsp grated peeled fresh ginger
2 tbs fresh lime juice
1 tbs of Oriental chile paste with garlic
3 garlic clove, miced
4 pieces of ribeye steaks
1 ts salt
1 ts freshly ground black pepper
Cooking spray

Let the wood chips soak in water for about 25-30 minutes, then drain well. Combine the first 8 ingredients together-stir well. Sprinkle the steaks with salt and pepper. Add wood chips to grill. Place steaks on grill rack coated with cooking spray; cook 5 minutes. Turn and baste beef with hoison mixture; cook for about 7 minutes or until desired degree of doneness.
