Mexican Rice
1/2 cup ground pork
3 tablespoons peanut oil
2 chirozos( Spanish Sausage)
1/4 cup chopped onions
2 tablespoons chopped green pepper
1 clove of garlic, minced
2 cups rice, uncooked
4 cups hot chicken broth
1/2 teaspoon saffron
Salt to taste
Cook the pork in a little oil until
pink disappears. Add in the sliced
chirozos, onion, pepper and garlic.
Stir and cook for 10 minutes. Add the
rice, broth, saffron and salt. Simmer
covered until the rice is cooked
