Will Need:
1 1/2 tbs of extra virgin olive oil
2 cup of baby portabella mushroom
2 cups of chicken broth
2 cups of short-grain rice
1/2 onion chopped
1/2 teaspoon of salt
1/4 teaspoon of fresh ground black pepper preheat oven to 375. In a
skillet over low-medium heat, cook onion with oil, then add
rice, chicken broth, salt and pepper and mushroom then let
rice come to almost a boil. Remove skillet from heat, cover
skillet and stick it in oven and let it bake at 375 for about
15 minutes. Uncover and let it sit for couple minutes.
