Black Olive & Eggplant Toss Tagliatelle
Will
Need:
1 box of tagliatelle pasta
1 cup of black olives
1 large eggplant
3 tablespoons of oilve oil
3/4 cup of lemon juice
4 garlic cloves, peeled and crushed
3 tablespoons of finely chopped green scallions
3/4 cup of freshly grated Parmesan cheese
Cook pasta until al dente. Do NOt overcook!. Slice the
olives, cut the eggplant into small cubes. Heat oil in pan in
medium heat and add garlic for 1 minute , then eggplant until
tender than add the olives, lemon juice. Add this sauce to the
pasta and TOSS then sprinkle with scallions and Parmesan.
Pepper and salt for taste.
