Grass and Scallop Fettuccine
Will Need:
1 .lb of fettuccine
2 tbs olive oil
1 onion chopped
3 garlic cloves chopped
3 tbs finely chopped lemon grass
1 .lb scallops
1 cup of coconut milk
1/2 cup pf chopped coriander leaves
Cook pasta until al dente. Drain. In a separate frying pan,
heat oil on medium heat, add onion, garlic and lemon grass for
3 minutes or until garlic turns light brown color. Add the
scallops in batches and cook cook until they're tender and
lightly browned then removed and keep warm. Add coconut milk
and let it simmer for 7 minutes until you see that the sauce
thickens a little. Place the scallops back into the pan and
cook for another 3 minutes. Season with salt and pepper for
taste (optional).
