Herrings in
Oatmeal
 Said to have been one of
the Queen mother's favorite dishes
4 herrings (cleaned)
4 oz/100 g/2/3 cup medium oatmeal
2 tsp salt
pinch of pepper fat for frying
Once the herring are deboned,
mix the salt and pepper with the oatmeal and baste both sides
of each herring - applying the baste with a firm touch.
Heat some fat in the frying
pan, and fry over a medium heat. Cook each side for
approximately three minutes until they turn a light shade of
brown. Once the fish is drained, you can serve it with
suitable garnish.
