Chilli Tomato Salad with Frisée
Serves: 4
Ingredients
12 cherry tomatoes, halved, or 6 small tomatoes, quartered
½ bunch fresh parsley, chopped
1 fresh green chilli, de-seeded and chopped
5ml spoon Dijon mustard
1½ x 5ml spoons olive oil
2 x 15ml spoons white wine vinegar
pinch salt
frisée leaves, to serve
Method
Put the tomatoes in a bowl and stir in the chopped parsley and
chilli.
Chill in the refrigerator.
Just before serving, combine the mustard, oil, vinegar and
salt to taste.
Pour this dressing over the tomatoes, toss well and serve
on a bed of frisee leaves
