Pork
Chops with Fennel6 pork chops
4 tsp. tomato paste
2 T butter
3 T. olive oil
1/2 cup Marsala wine
1/2 cup dry red wine
2 lrg. cloves of garlic, chopped
1 tsp. fennel seeds
Heat butter and oil in frypan and fry pork chops over
moderate heat for about 10 minutes, browning both sides.
Remove from pan and keep warm. Add Marsala, red wine, garlic,
fennel seeds and tomato paste to pan. Reduce sauce a little
over brisk heat. Return chops to pan and simmer for 10
minutes.
