Fajita
Stew
Buy about a pound of raw fajita meat pre-mixed with onions and
bell peppers and seasoning at your local deli/butcher counter
or Mexican market. I buy half chicken fajita and half beef.
Either are great for this dish but I use both at the same time
3-4 fresh tomatoes pureed in blender or 1 small can of tomato
puree
Saute fajita mixture in skillet till cooked do not drain
liquid that is released from vegetables, meanwhile in a
separate skillet fry the tomato puree, stirring constantly
with a wooden spoon till most of the liquid is evaporated and
tomato is a thick paste, add tomato to fajita mixture. Mixture
should be a bit saucy if not add a touch of water. Season to
taste with favorite seasonings for added flavor (exp: red
pepper if you like it extra spicy, Lawrys seasoning salt,
pepper). Serve over rice and enjoy!!
