Asparagus with Lemon Butter

2 lbs fresh asparagus, washed and trimmed
4 Tbs butter
2 Tbs lemon juice
Salt and freshly ground pepper to taste

Steam the asparagus until tender but crisp, about 10 minutes, and
plunge into cold water to stop the cooking and set the color.  Melt the butter in a small saucepan and stir in the lemon juice, salt, and
pepper.  Chill the asparagus and pour the lemon butter over them prior to transporting.  Serves 8 to 10.
