Apple Brown Rice Salad

3 apples
2 Tbs lemon juice
3 1/2 C cooked quick brown rice
3 skinless, boneless chicken breast halves, cooked and cut into chunks
1 medium red bell pepper, seeded, trimmed and chopped
1/4 C sliced green onions

Dijon vinaigrette:
3 Tbs olive oil
1/4 C chopped parsley
3 Tbs rice vinegar
2 tsp Dijon-style mustard
2 cloves garlic
1 tsp sugar
1/2 tsp salt
black pepper to taste

Whisk together vinaigrette ingredients until well combined. Core apples and cut into 1 inch chunks. Gently toss with lemon juice. Combine with remaining ingredients and chill until ready to serve. Makes 6 servings.
