Italian Al'Olio
1 lb pasta (we like angel hair or thin spaghetti)
3/4 C. olive oil
1 large sweet onion, diced
4-5 cloves garlic, diced
Options to personal taste: Anchovy, black olives, chopped
parsley,
While pasta is boiling in salted water, heat olive oil to
hot. Sauté' onion and garlic (do not brown!) Drain pasta,
place in bowl, add any options. If anchovies are used, heat
them in hot oil briefly then add around pasta. Drizzle hot oil
and onion, garlic mix over pasta. Sprinkle locatelli cheese
over all then serve....
