Rum Cake
2-C all purpose Flour
1-t baking soda
1-pinch salt
1-t ground allspice
1-t cinnamon
1-t nutmeg
1-1/2-C sugar
1/2-C vegtable oil
3-L eggs
1/2-C milk
1/4-C Dark Rum
3/4-C pecans
1-C Butter
1/4-C water
1-C sugar
1-1/4-C dark rum
Preheat oven to 300-d grease and flour 10"tube pan. Mix
together flour,baking soda, salt, allspice, cinnamon,nutmeg
set aside; in a med bowl, whisk together 1-1/2-c sugar,oil,
eggs,milk and 1/4 cup rum mix until blended. Make a well in
center of the dry ing. Pour rum mixture stirring until
combined. Stir in pecans pour batter in pan and bake for 1-hr
or until done cool in pans pierce cake 15-20 times with wooden
skewer to prepared cake. (for rum sauce)
Rum Glaze:
In saucepan melt 1-cut
butter, bring to slow boil and stir in sugar and continue to
boil 5-min stirring Const. Let mixture cool for 5-min. add the
rum and apply to cake that has been polked. when cake can not
hold anymore turn over and procede to do bottom. Let cake sit
until cake as absorbed all the mixture.
