Pizzelle6 eggs
3 1/2 C. flour
1 tsp. anise extract
1 tsp. vanilla
1 C. butter or margarine
4 tsp. baking powder
1 C. sugar
Beat the eggs and the sugar together until thick and
pale. Add the cooled melted butter or margarine, vanilla
and anise. Sift in the flour and baking powder and mix
until smooth. These can be cooked on the top of the stove
if you have an old fashioned pizzelle iron. You can also
use an electric iron. Place a heaping teaspoon full of the
batter on the top 1/2 of the iron. Close and cook about 30
seconds, until light brown. Remove carefully with a fork
and cool flat, or roll into cones while warm. Sprinkle
powdered sugar on top.
