Australian Pavlova
4 egg
whites
pinch of salt
1 cup castor sugar (granulated sugar)
1teaspoon vinegar
1teaspoon cornflour
1teaspoon vanilla
lots of whipped cream and any fruit for decoration eg.
Banana’s, strawberries, passionfruit etc
Preheat oven to 300F (150C) before you start doing any
preparation. Beat egg whites and salt together until stiff
enough to form peaks. Sift sugar and add very slowly, beating
it at a high speed until all sugar is dissolved. Lastly fold
in cornflour, vinegar and vanilla – gently.
Pile
mixture on a tray with grease proof paper. Shape the pile
into a circle using a spatula to mould sides so that they are
a little higher than the rest of the cake.
Bake
in the bottom of the oven for 1.5 hours or until quite firm to
touch. Turn oven off and leave pavlova in oven until its
cool.
Whip
the cream and spread on top, placing fruit as desired or even
grated chocolate.
