Chewy Maple Cookies

These are sooo good and very easy to make. They taste kind of like maple pancakes.

1/2 cup shortening
1 cup packed light brown sugar
1 egg
1/2 cup pure maple syrup
1/2 tsp vanilla
1-1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt

In a mixing bowl cream shortening and brown sugar until fluffy. Beat in the egg, syrup and vanilla until well mixed. Combine flour, baking powder and salt, add to the creamed mixture. Drop by tablespoons 2 inches apart (they do spread) onto greased baking sheets. Bake at 350 for about 12 minutes. Watch close. As soon as they start browning take them out (if you want a crunchy cookie let them brown) Let cool a few minutes before removing from baking sheet.
