1 cup sugar
1/4 cup flour
3 tbsp. cornstarch
1/4 tsp. Salt
2 cup water
3 eggs, separated
1 tbsp. butter
1/4 cup fresh or bottled juice
Grated rind of 1 lime or lemon
Baked 9" pie shell
Combine the sugar, flour, cornstarch and salt in a saucepan
and gradually stir in the water. Cook, stirring constantly,
until thickened. Gradually stir the mixture into the beaten
egg yolks, return to low heat and cook, stirring, for 2
minutes. Stir in the butter, lime juice and rind; cool
slightly. Pour into the baked pie shell and cool. Top with
meringue and brown in oven.
6-8 servings.
