2 cups flour
3/4 tsp baking powder
1/4 tsp salt
3/4 cup butter or regular margarine, softened
1 cup sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups shredded sweetened coconut
Preheat oven to 375. Combine flour, baking powder, and salt in
a med. bowl. Beat butter and sugar in a mixer bowl at med.
speed until light and fluffy. Beat in egg and vanilla. With
the mixer at low speed, beat in the dry ingredients until just
combined. Stir in the coconut.
Drop the dough by level tablespoonfuls onto ungreased cookie
sheets. With the bottom of a glass dipped in flour, flatten
each cookie to 1/4 inch thickness, then press with the back of
a fork to form ridges.
Bake for 10 to 12 minutes or until the edges are golden.
Transfer to wire racks to cool completely.
