Chocolate Tea Bread
1/4 cup butter
2/3 cup sugar
1 egg
2 cup sifted cake flour
1 teaspoon baking soda
3/4 teaspoon salt
1/3 cup cocoa
1 teaspoon cinnamon
1 cup buttermilk
1 cup raisins
3/4 cup walnuts, chopped
In large bowl cream the butter. Add sugar gradually,
creaming well after each addition. Add egg; beat well. Sift
flour, baking soda, salt, cocoa, and cinnamon together in
large bowl. Add to the creamed mixture alternately with the
buttermilk, beating until well blended after each addition.
Stir in the raisins and walnuts. Turn into greased 9 x 5 x
2-3/4-inch bread pan. Bake at 350-degrees for 1 hour. Cool
on wire rack. Spread with softened cream cheese, if desired
