Fried Chocolate Pies
1 1/2c. sugar
1/2c. cocoa
Evaporated milk
1tsp. vanilla
Pastry dough
Sift sugar and cocoa once or twice; add milk, using
enough only to keep mixture stiff. Add vanilla. Mix
again and work out sugar grains. Roll out pastry into
circles, using a saucer to keep them the same size.
Scant Tablespoons of filling near edge of one side of
circles. Fold pastry over; crimp edges and prick tops
with fork tines. Heat deep fat in 6 inch iron skillet
until smoking hot. Fry pies in fat until golden brown,
drain on paper towel.
( I use a deep fryer when I tried these, I thought it
turned out o.k.)
