Chocolate Covered Easter Eggs

3c. sugar
1/2c. white karo syrup
1/2c. water
1 egg white, stiffly beaten
1tsp. flavoring (vanilla, lemon, orange, almond, peppermint, walnut.)
Food coloring as desired
Chocolate for dipping
1Tbsp. paraffin for chocolate
Cook first 3 ingredients in a heavy saucepan over low heat for 3 minutes. (TIME).
Pour half of this over egg white, beating. Continue cooking remaining half for 2 minutes (TIME). Pour half of this over beaten egg, continuing with the beating. Cook remaining sugar mixture for 1 minute more (TIME), then pour this over the beaten egg. Add preferred flavoring or desired food coloring and any additional nuts, candied fruits, coconut, etc. desired.
The egg white/sugar mixture should be quite stiff. Let cool and use hands to shape portions of mixture into egg shapes. Place on waxed paper to firm up (24 hours). White or brown chocolate may be purchased or melt 1 bag of chocolate chips in a double boiler and add 1 Tbsp. paraffin. Remove from heat and dip formed eggs up to 3 times to get desired covering.
Eggs may be decorated as desired
