Canterbury Crumpets.

8 Wolferman's Classic Crumpets, toasted
1 package (8 ounces) cream cheese
softened
3 tablespoons low fat yogurt
3 tablespoons sugar
1 teaspoon vanilla extract
Seasonal fruits-such as kiwi, Granny
Smith apples, peaches, strawberries etc.

Combine cream cheese, yogurt, sugar and vanilla in mixing bowl; beat with fork until smooth. Cover and refrigerate until ready to use. Spread cream cheese mixture over toasted crumpets, then arrange fruit in overlapping pattern over cream cheese. Makes 8 servings
