Calzones
Whatever the choice, use filling sparingly and drain well to
avoid a soggy crust.
1 1/3 cup water
2 tbsp olive oil
1 tsp salt
4 cups flour
1 tbsp active dry yeast
1 tbsp cornmeal
1 egg
Place first 5 ingredients in bread pan in order listed.
Insert pan into machine. Keep pressing the "SELECT" button
until the course selection arrow on the right side of the
screen indicates "DOUGH." Start machine. Beat egg to combine;
refrigerate until ready to glaze calzones. Meanwhile, prepare
filling. We offer two filling recipes, or create your own.
Sausage, Cheese and Onion Filling
2 cups mozzarella cheese, shredded
8 oz. Italian sausage, bulk
1 small red onion, chopped
½ cup tomato sauce
In a medium-sized skillet with medium heat, thoroughly cook
and crumble sausage.
Three Cheese and Herb Filling
2 cups mozzarella cheese, shredded
1 cup Parmesan cheese, grated
8 oz. feta cheese, crumbled
1 tbsp oregano or basil, fresh, chopped
¼ tsp black pepper,
½ tsp olive oil
Combine Parmesan and feta cheeses with herbs. Set aside.
Preheat oven to 400°F. Sprinkle cornmeal over heavy-duty
baking sheet that will not warp in extreme heat.
After the Breadman Utimate bread machine has completed the
"DOUGH" cycle, it will beep. Press the "Reset" button. Remove
pan. Place dough onto a lightly floured work surface; divide
into 4 sections; shape each into a ball. Pat or roll into a
thin circle, about 10 inches in diameter. Place 1/2 cup
mozzarella cheese on half of each circle, leaving a 1-inch
border. During baking, the melted cheese will seal the dough
and prevent other liquids from seeping through. Divide
remaining ingredients into fourths; layer on mozzarella. Fold
remaining circle half over filling to make half-moons; press
edges of dough firmly together with tines of a fork. Place
calzones on prepared baking sheet; do not let rise. Brush egg
over each calzone for a golden sheen. Bake on middle rack of
preheated oven for 20 to 25 minutes or until calzones are
golden brown. Remove from baking sheet to a serving platter;
let cool for 5 minutes. If desired, slice into wedges
