Apricot Bread
1 cup dried apricots, chopped
1 cup sugar
2 tbsp butter
1 egg
2 cups flour
2 tsp baking powder
1/4 teaspoon baking soda
3/4 cup orange juice
1/2 cup nuts
In a small bowl soak the apricots in warm water for about 1
hour. Drain. In a large bowl combine all of the ingredients
together, adding the apricots last. Mix well. Pour mixture
into a loaf pan. Bake at 350-degrees for 1 hour or until test
done.
