Blueberry Bread

3c. flour
1c. sugar
1Tbsp. baking powder
1/2tsp. salt
1/4tsp. baking soda
1 beaten egg
1 2/3c. milk
1/4c. cooking oil
3/4c. chopped walnuts, pecans or almonds (optional)
1tsp. finely shredded lemon peel
1c. fresh or frozen blueberries

Grease bottom and 1/2 inch up sides a 9x5x3 inch loaf pan; set aside. In a large mixing bowl, stir together flour, sugar, baking powder, salt, baking soda, and lemon peel. Make a well in center and set aside. In a medium bowl combine egg, milk, and cooking oil. Add egg mixture all at once to the dry mixture. Stir just until moistened. ( batter may be lumpy.) Fold in blueberries and nuts.
Spoon batter into prepared pan. Bake in a 350* oven for 1 to 1 1/4 hours or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. Remove loaf from pan. Cool completely on wire rack. Wrap and store overnight before slicing.
Makes 1 loaf.
