Black Walnut Loaf Cake 4 cup fresh, peeled and diced apples
2 cup brown sugar, packed
1 1/2 cup black walnut pieces
3 cup flour
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp soda
1 cup vegetable oil
1 tsp vanilla
2 well beaten eggs
Mix apples, sugar, and walnuts in bowl and let stand for 1
hour. Stir often to allow mixture to make own juice. Add
flour, cinnamon, salt and soda then add oil, vanilla and eggs
and stir thoroughly. Stir by hand, not mixer. Pour batter into
greased and floured tube or loaf pan. Bake at 350 degrees for
1 hour, then at 300 degrees
for 15 minutes. Cool. Remove from pan.; Serve with whipped
cream as garnish.
