Banana Bread1/2 cup shortening
3/4 cup sugar
2 eggs, beaten
1 cup of finely mashed banana pulp
1 tsp. lemon juice
2 cups flour
3 tsp. baking powder
1/2 tsp. salt
3/4 cup chopped pecans
Cream the shortening with the sugar until light and
fluffy. Beat in eggs, banana pulp and lemon juice. Sift
together the flout, salt and baking powder. Stir the dry
ingredients into the batter and fold in the pecans. Pour
into a well grease loaf pan. Bake at 375F. degrees for 1
1/4 hours
