Applesauce cake3/4 cup shortening, melted
1 cup white sugar
2 cups sifted flour
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. nutmeg
3/4 tspn. cloves
2 cups hot applesauce
2 tsp. baking soda
1/2 cup raisins
1/2 cup walnuts
1 pkge. mincemeat
Heat applesauce and add baking soda. Break up mincemeat
and add to applesauce. Combine with remaining ingredients.
Place in a greased and floured tube pan. Top of cake may
be decorated before baking with alternately placed walnut
halves and candied cherry halves. Bake at 350F. degrees
for 45 to 50 minutes. If you would like a fruitcake you
may add 1 cup of assorted mixed candies fruit. This cake
is especially good because it is not dry like a fruitcake.
