Baked Apple DumplingsWith the apple harvest in full
swing, it's time to turn thoughts to cooking with New
England's favorite fall fruit. These Baked Apple Dumplings
are delicious, hearty and simple to make. They're great
for dessert or breakfast, topped with cream, frozen yogurt
of ice cream. Be prepared to make a second batch.
Dough:
1 3/4 c. flour
1/4 T. baking soda
1 t. sugar
1/2 c. milk
2 t. baking powder
1 t. salt
1/2 c. margarine or butter
1 T. vinegar
Add vinegar to milk and set aside. Combine flour,
baking powder, baking soda, salt and sugar. Cut in
margarine or butter with a pastry knife until texture is
crumbly. Add milk
, stirring only enough for a dough to hold together. Knead
4-6 times. Roll out to 1/4" thick square.
Combine:
3 T. butter sortened
4 T. brown sugar
1 t. nutmeg
2 T. raisins
1 t. cinnamon
2 T. chopped walnuts or pecans
Peel and core:
2 McIntosh, Cortland Rome or other baking apple, and slice
in half width-wise.
Preheat oven to 375F degrees. Cut the biscuit dough
into quarters. Place an apple half on each and fill with
1/4 of the filling. Pull the dough by its corners up
around apple and pinch of brown. Makes 4
