Alaska Crumpet.
8 Wolferman's Blueberry Crumpets.
1 quart strawberry ice cream
4 egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar
Slivered almonds, for garnish
Preheat oven to 450 degrees. Place crumpets on cookie sheet
and top each with a large scoop of ice cream. Place in freezer
while preparing the meringue. In a small bowl, beat egg whites
and cream of tarter until foamy. Gradually beat in sugar and
continue beating until stiff peaks form. Spread meringue over
ice cream, sealing the edge of each crumpet. Bake for 3 to 5
minutes or until golden brown. Garnish with slivered almonds.
Serve immediately. Makes 8 servings.
