Cherry Tomato Appetizers
1 pint cherry tomatoes
1/2 pound blue cheese, mashed
1/4 cup sour cream
1 teaspoon lemon juice
salt to taste
dash Tabasco
paprika
chopped parsley
Wash tomatoes, cut off tops and scoop out pulp. Drain well.
Mix remaining ingredients. Stuff tomatoes with mixture.
Garnish with paprika and chopped parsley. Serve chilled.
Makes about 25
Tip, allow quite a bit of time to make these as they are
very fiddly but really popular with blue cheese lovers !!
