BBQ Shrimp and Bacon-Water Chestnut Kabobs
24 Shelled deveined uncooked med shrimp
3TBS BBQ Sauce
3TBS Salsa
Wooden skewers, soaked in water
4 slices bacon, each cut into 6 pieces
24count Canned whole water chestnuts, well drained
1/2 med red bell pepper, cut into 12 pieces
Pineapple chunks
Rinse shrimp, pat dry. In med bowl combine BBQ sauce
and salsa, mix well. Reserve 2TBS mixture in small bowl.
Add shrimp to remaining mixture. toss gently to coat.
Insert skewer through both ends of each shrimp. so
shimp forms a C on skewer. Wrap 1 bacon piece around half
of each water chestnut. insert onto skewer. Add pepper,
pineapple piece. Cook on grill or broil for approx 5 min
on each side or until edges of bacon begin to brown and
shrimp is no longer pink.
With brush or teaspoon, top each shrimp with reserved
sauce mix. Arrange on serving platter.
