Barbecue Dry Rub
1 tbsp black peppercorns
1 tbsp coriander seeds
1/2 tsp whole cloves
1 tsp brown mustard seeds
2 tbsp sweet paprika
2 tbsp chili powder
2 tbsp brown sugar
1 tbsp mustard powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Heat peppercorns, coriander seeds, cloves and mustard
seeds in a small dry skillet over medium heat, swirling pan
gently until they become fragrant, remove from heat and cool
slightly. Grind all in a spice mill or other grinder. Pour into
a small bowl and add other ingredients, mixing well. To use-rub
on meats at least 15 minutes before cooking
