Corn Fritters
16 oz can whole kernel corn
1 cup all purpose flour
2 large eggs
1/2 cup finely minced onion
1/2 cup bacon bits
1 tsp paprika
peanut oil for frying
Mix all ingredients in a large bowl.
In a large frying pan, preferably cast iron, over medium heat
get oil to a point where a drop
of water will sizzle.
Drop batter by large spoonfuls and brown fritters on both
sides.
Makes about 3 dozen fritters.
